herby Italian mini meatloaves

We’re trying to use everything in our freezer before we go grocery shopping again, so I’ve had to be a little creative with my recipes this week. (I usually use e-mealz, which is a snap.) I knew we had ground turkey in the freezer, so I decided to do something with it for dinner last night. Burgers sounded boring, and I didn’t really have anything to mix it with, so I decided to make meatloaf. One problem…I can’t stand meatloaf. I know most of you probably think I’m strange because of it. I know my husband and dad do since meatloaf is a favorite of both of them.

So instead of making a traditional meatloaf, I decided to invent a new kind of instead, in hopes of actually enjoying my dinner. This is what I came up with, and I was pretty pleased with it. The amounts are approximations since I hardly ever measure ingredients unless I’m baking. Here’s how it goes…

What You Need
  • 1.3 lb. package of ground turkey (any ground meat would work fine)
  • 1/2 cup (plus extra for the top) spaghetti sauce
  • 1 egg
  • 1/2 cup (plus extra for the top) parmesan cheese
  • 1/4 breadcrumbs
  • 1 tsp (or about 1 clove) minced garlic
  • 1 heaping handful of fresh Italian herbs (I used basil, oregano, and flat leaf parsley from my garden)
What To Do
  1. Preheat the oven to 350-degrees.
  2. Mix the first six ingredients together thoroughly.
  3. Finely mince the herbs, then incorporate into the meat mixture.
  4. Form mixture into six equally sized mini loaves, then top with extra spaghetti sauce and parmesan cheese.
  5. Bake at 350 for about 45 minutes.
