herby Italian mini meatloaves
Posted on Wednesday, July 6th, 2011 at 8:35 pmWe’re trying to use everything in our freezer before we go grocery shopping again, so I’ve had to be a little creative with my recipes this week. (I usually use e-mealz, which is a snap.) I knew we had ground turkey in the freezer, so I decided to do something with it for dinner last night. Burgers sounded boring, and I didn’t really have anything to mix it with, so I decided to make meatloaf. One problem…I can’t stand meatloaf. I know most of you probably think I’m strange because of it. I know my husband and dad do since meatloaf is a favorite of both of them.
So instead of making a traditional meatloaf, I decided to invent a new kind of instead, in hopes of actually enjoying my dinner. This is what I came up with, and I was pretty pleased with it. The amounts are approximations since I hardly ever measure ingredients unless I’m baking. Here’s how it goes…

What You Need
- 1.3 lb. package of ground turkey (any ground meat would work fine)
- 1/2 cup (plus extra for the top) spaghetti sauce
- 1 egg
- 1/2 cup (plus extra for the top) parmesan cheese
- 1/4 breadcrumbs
- 1 tsp (or about 1 clove) minced garlic
- 1 heaping handful of fresh Italian herbs (I used basil, oregano, and flat leaf parsley from my garden)
What To Do
- Preheat the oven to 350-degrees.
- Mix the first six ingredients together thoroughly.
- Finely mince the herbs, then incorporate into the meat mixture.
- Form mixture into six equally sized mini loaves, then top with extra spaghetti sauce and parmesan cheese.
- Bake at 350 for about 45 minutes.

That sounds yummy! I make a somewhat similar version…
I mix the turkey with breadcrumbs, a splash of milk, shredded cheese, and the same garlic/spices you use. Sometimes I add diced bell peppers. Instead of forming into loaves, I flatten it into a square pan and bake. Just before it’s done, I put a can of diced tomatoes (usually garlic and basil) on top and let it heat through.
I call it “Flat Meatloaf”.

“Chef”- So it resembles a meatball recipe. So what? I wasn’t using a recipe for meatballs, meatloaf or anything…just trying to make a delicious dinner, and I definitely succeeded at that. Considering I’m the only one out of the two of us who has actually tasted the dish, I’d say my review is more reliable.
